Fischer's at Baslow Hall Launches The Wine Room

Fischer’s are delighted to announce the launch of The Wine Room at Baslow Hall in early March 2018. Previously The Study, a traditional private dining room in keeping with the Manor House style, The Wine Room will be transformed into a contemporary and sophisticated space where guests can indulge their passion for fine food and wine.



Fischer’s have created The Wine Room with the specific intention of enhancing the overall eating and drinking experience. The Wine Room will be the perfect environment to showcase the range and diversity of wines Fischer’s has access to from around the globe, complementing the diverse flavours of their award-winning cuisine.


The room has been designed and built by local architects Bluecarrot, and features a temperature controlled “wine wall”.  The interior is lavished with traditional Georgian wall paneling, finished in blue teal. Washing the entire room, ceiling included, this deep blue gives an elegant yet moody and intimate atmosphere.


Informal, yet informative, The Wine Room will be a dedicated space where guests can sip, savour and discover new and old wines alike, alongside Fischer’s award-winning cuisine.


A series of tasting events are planned over the coming months. Including; Meet the Maker, when guests can meet suppliers along with visiting growers to learn about wines from both famous and lesser-known vineyards. The Tastings will be accompanied by supper.

As well as special events and collaborations, more of which are in the pipeline for 2018, The Wine Room will be available at both lunch and dinner for up to 12 guests.  The Seasonal Tasting Menu, for which Fischer’s is well known, can be accompanied by a selection of wines chosen to complement and enhance the dishes.


Max Fischer has been a lover of wine all his life and along with Fischer’s General Manager and Sommelier, John Cooper, curates the list, from the very finest old established wines and exciting new discoveries.

“I have always loved good wine, but it was only when I met the late John Wynne of the Epworth Tap (a famous wine bar near Doncaster) around 35 years ago that I really began to develop my wine pallet.  John’s knowledge of wine and his wine bar were famous in the North and further afield.  John introduced me to many new aromas and flavours and helped me to appreciate the subtle qualities of wine.  I have been learning ever since and still feel I know little, but my passion for learning and discovering is as fresh as ever and I love to share that with others.”

An independent, family owned hotel, Baslow Hall is home to 11 luxury bedrooms, and Derbyshire’s highest awarded restaurant, Fischer’s. At the helm of award-winning Fischer’s kitchen is Head Chef Rupert Rowley. A native Yorkshire-man, Rowley spent a number of years developing his craft in the kitchens of Raymond Blanc, John Burton Race and Gordon Ramsay.


Plating up seasonal dishes from locally sourced ingredients, Rupert is passionate about Derbyshire and Yorkshire produce, retaining and building a strong network of superb suppliers, and championing local artisan producers. Baslow Hall boasts its very own walled kitchen garden, producing an array of seasonal fruit, root and green vegetables and a wealth of herbs, which are harvested daily for the kitchen. The woodland area is home to a number of beehives from the Sheffield Honey Company and honey from the hives is harvested for use in the kitchen and served daily at breakfast.


Using the best ingredients from the UK’s vast natural larder, Fischer’s seasonal tasting menus transport guests from the peaks of Derbyshire to the coastlines of the United Kingdom and North-West Scotland, featuring 7 seasonal courses at lunch and 9 seasonal courses in the evening, alongside  wine pairings, expertly curated by General Manager & Sommelier John Cooper. Fischer’s also offers a dedicated Vegetarian Tasting Menu, showcasing superbly executed vegetable-centric dishes.


In 2015, Fischer’s invested in a new, bespoke, cutting edge kitchen, enabling Rupert and his team to push culinary boundaries with the latest cooking techniques. Situated back-stage at the heart of the bustling kitchen, Fischer’s new Kitchen Tasting Bench offers a truly contemporary gourmet experience.  The four-seater bench looks directly onto the kitchen, making it a seriously up-close-and-personal experience with a first-class chef and talented kitchen in action, as they create their award-winning dishes right before your eyes.


From weekend breaks in the country, to languid Sunday lunches, special occasion dinners, spontaneous lunches and private events, guests can rest assured that everything at Fischer’s is cooked to perfection with passion, pride and precision.
