Aisha of Ca.ake and her husband were one of the first stands I sought out at the Fine Food North show in Harrogate, as I couldn’t wait to try her Ras Malai Cake.I like Ras Malai anyway (an Indian dessert made with infused Paneer Balls and thick, sweet Cream) and was intrigued as to how it would translate into cake form.



Oh my word, I was instantly smitten!! Light, sweet sponge was topped with airy cream, Pistachio nuts, and Rose Petals and the unmistakeable fragrance of Cardamom came through on my palate; right there, were several of my favourite flavours and I grinned in delight as they all washed over me. Aisha was so happy to hear I loved it; she is your typical start-up baker who is told by friends and family that they’re good, but until they venture out to the world and hear the praise, don’t quite believe they have value.

Ras Malai is one of several beloved Indian desserts that Aisha has transformed into cake and she is now trying to figure out how to post them nation-wide; watch this space, hopefully it won’t be long until we can all be savouring her elegant creations – I have volunteered to be a Guinea Pig for the process!!
