Fischer's To Launch Foraging Experiences With Totally Wild Foraging

Fischer’s are delighted to announce an exciting collaboration with James Wood of foraging specialists Totally Wild, offering bi-monthly foraging lunches and bespoke foraging immersion days. Launching in May 2018, Fischer’s foraging experiences will give budding hunter-gatherers the chance to experience the abundance of wild ingredients on offer in the Derbyshire area, followed by a lunch or evening meal inspired by the day’s bountiful harvest.
Utilising truly local, seasonal and fresh wild ingredients at their best, the foraging menus are created in collaboration with James Wood and Fischer’s Head Chef Rupert Rowley. Guests can expect the menu to use delicious wild Derbyshire ingredients from Wild Garlic, Gorse Flowers, Greater Celandine and Birch Sap in the spring, to Hedgerow Celery, Wood Sorrel and Garlic Mustard in the summer, and autumnal Fungi from Porcini to Oysters.
A native Yorkshire-man, Rowley has previously worked with Raymond Blanc, John Burton Race and Gordon Ramsay before returning to his roots in 2002 when he joined the Fischer’s Team. Rupert has a passion for simple, well-cooked food, sourcing the best homegrown and native produce wherever possible.
Having been in love with the wild world since childhood, Forager James Wood spent many years developing his skills and knowledge of all things “wild” from mushroom paper to elderberry salt. James is now seen as one of the UK’s top foraging and wild food experts, he’s on a mission to share this knowledge and show people that wild food is not only everywhere, it can taste amazing.

Foraging Lunch
At these bi-monthly foraging lunches, guests will be invited to explore the fantastic grounds surrounding Baslow Hall to discover the huge abundance of wild ingredients that lie a stone’s throw from the tables they will later dine at. From flowers that taste like pineapple to leaves that taste of aniseed, guests will be guided through this culinary journey by a Totally Wild UK’s professional forager, before returning to Baslow Hall for a three course lunch.

Foraging Immersion Day and Dinner
At these intimate and bespoke foraging days, guests will be welcomed with wild tea and scones with wild jams as they meet their professional forager for the day. After introductions, get in to the mind-set of a forager before heading out to Derbyshire’s wild spaces to discover the vast array of wild edibles on offer.
Whilst on the forage guests will try a vast selection pre-made tasters from infusions to jams, chutneys, salt pickles, syrups, salts and herb mixes, before sitting down to light lunch and some bubbles. Return to Fischer’s and get the chance to relax in one of Baslow Hall’s luxury bedrooms, or cosy lounge before preparing for dinner. The day will culminate with a special evening dining experience at Fischer’s Kitchen Tasting Bench with Head Chef Rupert Rowley, inspired by and utilising the wild ingredients and flavours found throughout the day.
