Alan Hill, Head Chef at The Cavendish Hotel at Baslow, on the Chatsworth Estate, has chosen Flying Fish Seafoods Limited as his exclusive fish supplier. The new menus for both the Gallery Restaurant and Garden Room at The Cavendish offer fresh fish that has been delivered by the Cornish based company with the promise of "ship to chef" within 24 hours.
The Flying Fish Seafood company was formed eleven years ago to supply the very finest day-boat caught fish guaranteed for freshness, quality and sustainability. It is now the preferred supplier of fish to the top chefs in London, the Cotswolds and the South of England and by delivering to Alan at The Cavendish in Derbyshire it has now added the Peak District.
The choice for diners in the Garden Room this spring includes Mediterranean fish soup, Loch Duart salmon, Cornish mussels, Chatsworth Gold battered Haddock and market fish of the day whilst in the Gallery Restaurant the menu offers hand dived King Scallop, Portland Cornish Crab and Cornish Red Mullet.
Joe Barratt, Account Manager at the Flying Fish Seafoods company, said: "We promise to deliver the best quality fish within 24 hours, enabling restaurants to truly boast the freshness and quality of their produce. This is crucially important because there is nothing quite as delicious as fresh fish properly caught by hand, by a day boat specialist, and cooked with loving care in one of the country's top kitchens."
